The invention relates to nucleic acid molecules which code for polypeptides with the enzymatic activity of a fructosyltransferase. The invention also relates to vectors, host cells and transgenic plants containing nucleic acid molecules of this type and to methods for producing polyfructose, especially of the inulin type, using the hosts described and/or the fructosyltransferas e that they produce.
