The automated method cuts potatoes (1) or other fruit or vegetables into a polygonal shape with flat ends and convex sides. The cutting blades (4) are stationary and the products moved past them. An independent claim is given for a machine to carry out the manipulation of the potatoes and the cutting. Potatoes with their ends already cut off are held between grippers (6D) at either end, tensioned by a spring (6E). The grippers move on a track (6B) which carry the potatoes past the cutting knife (4) in the correct trajectory.
