PROBLEM TO BE SOLVED: To obtain a food material having a nice palate feeling individual to sweet potato, high in preservability, and extensively available as a variety of cooking materials, and to provide its producing method. SOLUTION: This food material is obtained by cutting sweet potatoes into e.g. 5 to 25 mm-square small dices, by treating the dices in oil at high temperature via such a means as an oil-cooker, and by rapidly cooling and freezing it. The food material may used for e.g. croquette or potato salad, which leads to utilize a texture of sweet potatoes to the utmost extent and further provide foods having a variety of palate feelings. |
