PURPOSE: A production of a pumpkin seed bean-curd is provided to have the excellent nutrition, and to have the abundant function by producing a bean-curd substituting soy bean for a pumpkin seed alternately. CONSTITUTION: The pumpkin seed bean-curd is produced by: immersing the peeled pumpkin seed 1 kg in water; shattering by a grinding machine while adding water of the amount of 4-5 times for the material; making a remainder by filtrating after boiling for 30-60 minutes; mixing a soy oil liquid in 1:1, 2:1, 3:1 ratio in the remainder of the pumpkin seed; producing an uncurdled bean curd by solidifying to maintain for 10 minutes at 70°C-90°C by adding a bean-curd solidifying agent while heating the remainder slowly; completing the pumpkin seed bean-curd by compressing and by dehydrating the uncurdled bean curd. |
