PROBLEM TO BE SOLVED: To permit the removal of moisture only on the surface of a food without deteriorating freshness of the food by a method wherein a plurality of belt conveyers and drying devices, provided on respective belt conveyers, are provided while the conveyer belt of the belt conveyers is constituted of a water absorbing sheet and the drying device is mounted on the returning passage side of respective belt conveyers. SOLUTION: This dehydrating machine 10 is constituted of a plurality of belt conveyers 1 and drying devices 2, equipped in respective belt conveyers 1. In this case, the belt conveyers are arranged so that the starting end of a second stage belt conveyer 1b is positioned below the terminating end of a first stage belt conveyer 1a. The conveyer belts 3 of respective belt conveyers 1 are formed of a sheet having water absorption properties while the drying device 2, having a structure that the conveyer belt 3 is dried by passing the same between hot rollers, into which steam is introduced, is attached to the returning passage side of respective belt conveyers 1. In this case, a cooling device 5 is provided at the downstream side of the drying device 2 in order to cool the conveyer belt 3 heated by the drying device 2.
