A process for treating a food product comprises contacting the food product, preliminary mixed with water, with ozone (2) in a multistage static mixer (11). A pump (10) in line with the mixer (11) pressurizes the mixture food product solution/ozone. The ozone is injected before the mixing and between each stage (22 to 25). An Independent claim is also included for the installation in which the process is carried out. |
