PROBLEM TO BE SOLVED: To obtain a new enzyme-treated protein-containing food having excellent physical properties improving effect by TG, further improving effect of good throat-through property, good resistance to the teeth, etc., and preferable color tone and taste by including a protein treated with transglutaminase(TG) and oxdoreductase. SOLUTION: This food contains a protein treated with TG and oxdorecuctase. Calcium independent TG derived from a microorganism such as actinomycetes is preferable as the TG. Glucose oxidase, ascorbic acid oxidase or catalase is preferable as the oxdoreductase. When the protein is treated with TG and oxdoreductase, the treatment is carried out in the presence of at least one kind of a substrate of the above oxdoreductase, partial hydrolase of protein, milk protein and a thiol-containing material is added. At least one kind of wheat, fish meat, livestock meat, soybean protein and albumen is preferable as enzymatically treated protein. |
