摘要 PROBLEM TO BE SOLVED: To provide a method for preserving an edible flower by sugaring the same. SOLUTION: This method for preserving an edible flower comprises the following procedure: the edible flower is immersed in a glycerol solution containing fruit juice and an acid, then subjected to hydro-extraction and pigment stabilization followed by squeezing the liquor from the flower; subsequently, the resulting flower is admixed with a powder preparation comprising trehalose and glycine to coat the surface of the edible flower with the crystal, thereby obtaining the objective safe sugared edible flower good in reconditionability with its color tone and scent retained and the surface-coating crystal left unmelted over a long period.
