PROBLEM TO BE SOLVED: To obtain the subject product having excellent appearance and favorable taste by including an organic acid and carrying out a retort treatment. SOLUTION: This rice gruel with egg or porridge of rice and vegetables with egg packed in a container contains an organic acid and is subjected to a retort treatment. A brewed vinegar such as apple vinegar, etc., a citrus fruit juice such as lemon etc., being an organic acid-containing material is preferable as the organic acid due to excellent flavor. The amount of the organic acid added is preferably 0.005-0.1%. The product is obtained, for example, by adding an organic acid, a seasoning, a taste imparter such as a refined rice wine, etc., to clear water, heating and mixing them at >=90 deg.C to prepare a seasoning solution, gradually adding an egg solution to the seasoning solution with stirring at a low speed and dispersing the coagulated egg to the seasoning solution. For example, raw material rice and optionally ingredients are added to the seasoning solution, packed/sealed into a heat-resistant container and subjected to a retort treatment at 100-130 deg.C for 10-60 minutes. The amount of the raw material rice packed is preferably 5-10% calculated as raw rice based on the total amount packed. |
