PROBLEM TO BE SOLVED: To reduce cooling load in solidifying a lower layer, to enable us to omit a cooling process, to diminish costs in investing and running equipment and to produce high-quality multilayer gel food by employing a specific method. SOLUTION: This multilayer gel food is produced by the following processes: (1) preparing plural feed liquids separately by including a gelatinizer in one liquid and by including a component for triggering gelation of the gelatinizer in the other liquid; (2) measuring one fill of each of the feed liquids and mixing the measured liquids, followed by adjusting the temperature of a mixture of the liquids down to its gel temperature or below; (3) filling the adjusted liquid mixture into containers within 5 s after being mixed, followed by solidifying the liquid mixture; (4) filling other food on the solidified mixture. It is pref. to adjust the temperature of liquid mixture so as to become 0-15 deg.C lower than the gel temperature. The gelatinizer is pref. sodium alginate or the like, and the triggering component is calcium. |
