Method of recording and processing an image of a scene situated in a given plane P related to two perpendicular directions x, y, the said image being supplied by an imaging instrument (100) having, in the u (u = x,y) direction of the plane P, a modulation transfer function Hu(f) with cut-off frequency fcu, f designating the spatial frequency, a method including, on the one hand, a first step of recording the said image at a frequency feu of sampling the image in the u direction, equal to kfcu, k being an integer greater than 1 and, on the other hand, a second step of processing the recorded image consisting in applying a deconvolution filter to the said image. According to the invention, the said deconvolution filter is equal, in the frequency domain and for each direction u, to the product of the inverse of the modulation transfer function Hu(f) and an adjustable truncation function Iu(f).
