摘要 The invention concerns a method for preparing flaky pastry, in which is mixed at room temperature a composition containing flour, salt, acid proteins and an inactive fermenting agent; during the mixing step lumps of butterfat are added to this mixture so as to obtain a heterogeneous paste; and finally water is incorporated in this paste, the paste is extruded, and the resulting flaky pastry is stored at a temperature between -40 DEG C and +10 DEG C.
