PURPOSE: A xylitol dehydrogenase for acetic acid bacteria, a gene for coding the xylitol dehydrogenase, and a method for preparing the xylitol dehydrogenase are provided for purpose of use in the field of food and drug industries. CONSTITUTION: The xylitol dehydrogenase comprises (A) a protein having an amino acid sequence of sequence No. 4; or (B) a protein with a xylitol dehydrogenase activity having an amino acid sequence including displacement, deletion, insertion, or addition of one or several amino acids in the amino acid sequence of sequence No. 4. The xylitol dehydrogenase comprises (C) a protein having an amino acid sequence of sequence No. 6; or (D) a protein with a xylitol dehydrogenase activity having an amino acid sequence including displacement, deletion, insertion, addition or inversion of one or several amino acids in the amino acid sequence of sequence No. 6. |
