PURPOSE: To provide wort with increased yield, improved filter ability, and preferable enzyme as well as their process. CONSTITUTION: The mash which is prepared from malted or unmalted cereals, or the mixture of malted and unmalted cereals in the presence of the mixture of enzyme activities, is filtered for obtaining mash, herein the mixture of enzyme activities is selected from a mixture comprising at least beta-glucanase activity and alpha-L-arabinofuranose releasing activity or a mixture comprising at least beta-glucanes activity, endoxylanase activity, and alpha-L-arabinofuranose releasing activity. |
