PROBLEM TO BE SOLVED: To provide a seasoning solution having a light color (35 or larger JAS color number), a small browning rate, a strong taste and an excellent aroma. SOLUTION: This method for producing a light-colored seasoning solution comprises fermenting a raw material mixture comprising 0-40 wt.% (converted into dry grains) of soybeans and 100-60 wt.% of raw materials comprising 25-100 wt.% of gluten and 75-0 wt.% of wheat, charging the obtained fermented product together with 7-24% salt water into a vessel and subsequently brewing the mixture by a conventional method.
