PROBLEM TO BE SOLVED: To solubilize carthamine, which is slightly water-soluble, by adding flavonoids to it. SOLUTION: Carthamine is obtained by an extraction under an alkaline condition from safflower after removing a yellow pigment by extraction with water using a conventional method. In this case, polysaccharides or flavonoids are used instead of addition of cellullose which is usually conducted. Flavonoids include hesperidin, naringin, rutin, and derivatives thereof, for example, such as glycosides having further a sugar as an adduct. Polysaccharides include glucomannan, chondroitin sulfate, tamarind gum, methylcellulose and the like. By adding these flavonoids or polysaccharides, then carthamine remains solubilized and does not form a precipitate even after neutralization of alkaline extract solution. Carthamine solubilized is excellent in pH stability and can maintain the same color tone even in an alkaline range as that in an acidic to neutral range.
