PROBLEM TO BE SOLVED: To prepare a bamboo shoot processed food that can manifest the synergism of a new delicious taste and a pharmacodynamic action and can be stored as a health food. SOLUTION: The sheaths of bamboo shoots are removed and the pulp parts are taken out. The tops of the pulp parts are cut off and they are further cut into several pieces. The cut pieces are treated with boiled water briefly and salted. The salted pulp pieces are washed with water, the remaining water is wiped off, then dried and the dried pulp pieces are pickled together with Japanese plums for a certain period. The Japanese plum pickles are separated from the bamboo shoot pulp cut pieces whereby the objective bamboo shoot processed food product is obtained. |
