PROBLEM TO BE SOLVED: To obtain a composition for devil's-tongue containing a slaked lime capable of providing a devil's-tongue food having texture of excellent glutinousness and sense of touch to teeth free from an offensive smell like an alkali odor caused by lime, by using approximately an equal amount of the slaked lime inserted of currently used slaked lime. SOLUTION: In this composition of devil's-tongue comprising at least refined flour of devil's-tongue or raw tuberous root of devil's-tongue, a coagulant and water, dried powder of fine slaked lime having <=7.5 μm average particle diameter and >=20 m2/g specific surface area or a mixture of the dried powder and water is characteristically used as the coagulant. |
