PROBLEM TO BE SOLVED: To prepare a compound liquor suitable for producing a coating compound and a chocolate substitute by roasting unroasted cacao powder and fat for producing confectionery in a blended state. SOLUTION: This compound liquor is prepared by the following steps: (1) preparing nib by pref. crushing and selecting cacao beans and by removing skin from the cacao beans; (2) forming chocolate liquor containing 50-60 wt.% cacao butter by smashing unroasted cacao nib; (3) preparing cacao powder by compressing the chocolate liquor to extract cacao butter and to form compressed cacao cake and by smashing the cacao cake; (4) roasting the cacao powder obtained and fat for producing confectionery in a blended state.
