PROBLEM TO BE SOLVED: To obtain in a high yield and purity a malic acid monoamide with good color tone and smell through such a process that acetylmalic acid monoamide is incorporated with water and 1-10 molar times of an alkali agent based on the acetylmalic acid monoamide followed by keeping the resultant system at a temp. of 30-90 deg.C and then adding 1-10 molar times, based on the acetylmalic acid monoamide, of an inorganic acid to the system followed by keeping the resultant system at a temp. of 30-90 deg.C and then subjecting the system to filtration. SOLUTION: This malic acid monoamide is obtained according to the following steps: 343.0 g of water is added to 343.0 g (1 mol) of acetylmono-N- laurylmalic acid amide followed by addition of 112.2 g (2 mol) of KOH, the resulting system is kept at 60 deg.C for one hour, and 1,216.6 g (2 mol) of 6% hydrochloric acid is then added to the system followed by keeping the resultant system at 40 deg.C for one hour and then cooling the system to 30 deg.C, and the resulting crystal is recovered through centrifugal filtration.
