Pre-determined size portions of food (21) in containers (11) are transported through the fryer (10) on an endless conveyor belt to be fried in a hot frying liquid. Each container is sealed, except for an inlet (15) in the top side used to fill the container and a sealable outlet (16) on the bottom side for removing the food. In at least one filling station (13) a pre-selected amount of hot frying liquid is added to the container through the inlet in the top side whilst the container outlet is sealed. At least one drainage station (14) is provided where the frying liquid is emptied from the container through the opened outlet.
