PROBLEM TO BE SOLVED: To provide an amylase having optimal activity in alkaline region and differing in enzymatic characteristics from known amylases. SOLUTION: This alkali amylase has the following enzymatic characteristics: (1) activity: cleaving theα-1,4-glucoside linkages in starch, amylose, amylopectin glycogen, and partial degradation products thereof to form maltooligosaccharides; degradingγ-cyclodextrin to form a maltooligosaccharide; however, inert toα-cyclodextrin,β-cyclodextrin and pullulan; (2) active pH range and optimal active pH: pH 6.0-10.5 and pH 9.0-10.0, respectively; and (3) pH stability: stable within the range of pH 7.0-12.0 (under treatment at 40 deg.C for 30 min). |
