PROBLEM TO BE SOLVED: To provide a method for efficiently producing higher oligosaccharides difficult to be obtained by the usual way in which the control of reaction conditions leads to a desirable polymerization degree by reacting dextranase with dextran under a frozen condition. SOLUTION: The higher oligosaccharides difficult to be obtained by the decomposition reaction of dextran with dextranase at room temperature have high molecular weights and are efficiently produced by reacting dextranase with dextran having 4,000-20,000 molecular weight under a frozen condition in advance, by getting information on the relationship among the polymerization degree of the resultant higher oligosaccharides, the reaction temperature and the reaction time and by reacting dextranase with dextran under a frozen state at set points of a reaction temperature and a reaction time to form a higher oligosaccharide having a desirable polymerization degree.
