PROBLEM TO BE SOLVED: To obtain a processed food of Cortinellus shiitake readily edible by consumers, having a flavor abundant in varieties according to various tastes of consumers. SOLUTION: Raw Cortinellus shiitake 1 is cleaned with water to remove sand and dust and dehydrated to eliminate excessive attached water (A). Then the cleaned/dehydrated Cortinellus shiitake 1 is steamed by a steamer (2) (B), the steamed Cortinellus shiitake 1 is put in a basket 3 and dried by its remaining heat (C). Then the Cortinellus shiitake 1 dried by the remaining heat is mixed with dried tangle 4 cut into tiny pieces to give a main ingredient M (D). In the operation, the Cortinellus shiitake is mixed with Flammulina velutipes 5 and Auricularia auricula 6 as subsidiary materials S which are sprayed with hot water. Then the mixture is immersed in a seasoning solution 7 and aged by a refrigerator for about a night (E). |
