PROBLEM TO BE SOLVED: To provide a process for the biochemical production of honey containing naturalized organic germanium by compounding a natural honey with an organic germanium. SOLUTION: An aqueous solution of sucrose or a honey-containing aqueous solution of sucrose is used as a sucrose-containing raw material 1. An organic germanium raw material 2 comprising β-carboxyethyl germanium sesquioxide is dissolved in the sucrose-containing raw material simultaneously with the addition of a honey enzyme 3 composed of invertase, diastase, glucose oxidase, etc., to obtain an organic germanium-containing sugar syrup 4 containing the activated honey enzyme, the syrup is mixed with a natural honey raw material 5 and the mixture is concentrated in a short time by heating while stirring under reduced pressure to obtain the objective honey 6 containing organic germanium. The objective honey containing naturalized organic germanium is biochemically produced by this process. |
