PROBLEM TO BE SOLVED: To obtain the subject inexpensive processed food with good flavor, high flavor preservability and high water solubility by using soybean hypocotyl, and to provide a method for producing the above processed food. SOLUTION: This processed food is obtained by the following procedure: soybean hypocotyl is heat-treated until it comes to a moisture content of 1-9.5 (pref. 3-9) wt.% and then subjected to extraction with an aqueous solvent, or prior to the extraction, washed with an aqueous solvent at 4-80 deg.C, to effect preferentially removing the components except isoflavone. |
