PURPOSE: A cabbage Kimchi of an anti-cancer function and a production method thereof are provided to show the anti-cancer function not only in the in vitro but also in the in vivo, and that is excellent in the preservation. CONSTITUTION: A cabbage Kimchi of the anti-cancer function comprises: radish 13.0%; leek 2.0%; powder of red pepper 7%; garlic 2.8%; ginger 0.6%; salted anchovies 2.2%; sugar 1.0%; refined salt 2.5%; leaf mustard 5% mixed in salted cabbage 100; fermented the first in 15°C; re-fermented in a low temperature of 5°C to pH4.3.
