PURPOSE: Yakju or Takju are prepared which can prevent denaturalization of taste and preserve at room temperature for long period of time. CONSTITUTION: Yakju or Takju composition is mixed, pre-sterilized at 75- 80°C for 60 seconds to sterilize sapropyte, then rapidly cooled to 20°C. The cooled material is transferred to a vacuum tank, and an abnormal color is removed in 750- 760 mm Hg of vacuum state. A carbonic acid is added into a can in a carbonic acid mixing tank, followed by post-sterilized at 65°C. for 20 minutes, rapidly cooled to room temperature to give the Yakju or Takju.
