PURPOSE: A juice of a red beet is provided to have an excellent taste, without discoloring, and not to generate a deposit. CONSTITUTION: The juice composite of the red beet is blended: an extraction liquid 85-89.9 wt%; usual food addition 10-14.9 wt% such as polydextrin, oligosaccharide, fructose, citric acid, and spices etc; vitamin C 0.1-5 wt%; beta-cyclodextrine 0.001-0.1 wt%.
