A dosing tray (24) rests on the conveyor surface and carries solid side sections (40, 42) about the central section (38), which is perforated by recesses (44) for portioning. Above, a box (26) with open base receives dough (27). Both box and tray are removable. The box can be slid back and forth over the tray. The open base of the box is closed, by pushing it onto either side section.
