摘要

The invention provides a method of manufacturing a coagulated protein chunk. The method comprises adding transition metal ions and an oxidising agent to a protein, compressing the resulting reaction product to form a chunk having a laminar structure. An edible chunk comprising a major proportion of protein and having a fibrous laminar internal structure is also described.
