The invention relates to the use of bentonite(s) as additive(s) to flour or dough for reducing the susceptibility to staling of bakery goods made therefrom. The bentonite(s) used has (have) a high water absorption index. In addition to the bentonite(s) there may be used hydrocolloids (gums) and other additives, such as shortenings, lecithin, surfactants, emulsifiers, acidulants and/or anti-fungal substances. |
