<p>In the present invention there is disclosed a process for preparing products containing fat by moulding between two separable mold surfaces defining an enclosed cavity. This invented process comprises the following steps: (i) placing a material containing of at least 25 percent by weight, preferably 60 percent by weight fat and at a temperature ranging from 28 to 55 degC into a cavity extending between two separable mold surfaces, whereby those surface have different thermal conductivity, (ii) leaving the fat-containing material in contact with the mold surface for a period being sufficient for solidification thereof and (iii) separating the mold surfaces from each other and taking the fat-containing product out of the mold.</p> |
