PROBLEM TO BE SOLVED: To produce quercitol having hypoglycemic actions and useful as a hypotensive agent, a health medicine, etc., without any adverse effects by making a microorganism belonging to the genus Agrobacterium or Salmonella act on myo-inositol. SOLUTION: Myo-inositol is added to a liquid culture medium at pH 7 containing a yeast extract, ammonium sulfate, potassium monohydrogenphosphate, potassium dihydrogenphosphate, magnesium sulfate, etc., and a microorganism belonging to the genus Agrobacterium or Salmonella [e.g. Salmonella typhimurium (IFO13245 strain)] is then inoculated thereinto. Shaking culture is carried out at 27 deg.C for 3 days to make the microorganism act on the myo-inositol and convert the myo-inositol into quercitol. Thereby, the quercitol of high optical purity is efficiently produced at a low cost. The quercitol is useful as a safe hypotensive agent having high effects without any adverse effects and a health medicine, etc., containing the quercitol.
