PROBLEM TO BE SOLVED: To obtain a new inflating acid composition capable of exactly controlling releasing rate characteristics for optimum utilization of various baking performances by heating calcium monophosphate anhydride under a specific condition. SOLUTION: This composition is useful as an inflating acid and is obtained by heating calcium monophosphate anhydride for a suitable time and at a suitable temperature to obtain a composition containing about 25-72 wt.% of P2O7. Preferably, the resultant composition contains about 40-70 wt.% of P2O7 and generates about 7-14 wt.% of ignition loss, and further a temperature of the calcium monophosphate anhydride at the heating is about 200-310 deg.C and the heating time is about 0.25-30 hrs.
