The internal surface of a wooden barrel (14) is stripped and sanitized by sweeping an intense infrared light beam (4) over the surface. This causes a sublimation of organic and/or mineral material on the surface, to a depth of 20 microns. Gases are sucked or blown away, and the heat produced sanitizes the surface. An independent claim is given for a device to carry out the process, including means of directing the light beam, and of rotating the barrel.
