<p>Coconut bonbons contng. sugar, egg-white and coconut are prepd. by boiling 100kg powdered sugar with 501. water for 1 1/2 hrs. at 115 degrees. 8 l. egg white are beatend for 20 mins. and 25 l. of the sugar syrup contng. 65% sugar in relation to the liquid (hydrometer measurement) is mixed with the beaten egg and left for 5 mins. 26 kg. dessicated coconut is mixed in for 5-10 mins. and the mixture formed into pastilles. Cherries are added before baking. Essences may be incorporated as desired and the amt. of the ingredients varied in the same ratio to each other.</p> |
