FIELD: processing of crustacean and utilization of process wastes. SUBSTANCE: method involves demineralizing crust with 3-4% solution of HCl used in the ratio of 1:6; continuously mixing it for 1-1.5 h at ambient temperature; filtering and washing obtained mass; deproteinizing filtered sediment by pouring 4-5% solution of NaOH used in the ratio of 1:6; mixing for 1-1.5 h at temperature of 70-80 C; filtering, washing and drying produced chitin.
