The invention concerns the production of compositions for protecting plants against oxidative stress, characterised in that said compositions comprise methionine-enriched lipoaminoacids, during acylation of a protein hydrolysate, or of amino acids individually or mixed, or after acylation, and lipoaminoacids partially or completely salified by basic amino acids, thereby providing them with antioxidant and antiradical properties. The invention also concerns complete or partial salification of such type of lipoaminoacids by microelements.
