A fat composition, for use as the fat phase of a margarine or spread, comprises 8-15% by wt. of the composition of a hard fat which is the random esterification product of a mixture of hardened vegetable oil having a slip m.p. not less than 50‹ C. and free from combined fatty acid having less than 16 carbon atoms; with fully hardened palm kernel oil in the ratio of 25-75: 75-25 parts by wt., and a liquid vegetable oil containing at least 40% of linoleic acid in which oil the proportion of saturated to unsaturated acids is not greater than 1: 2 by wt. The hardened vegetable oil may be palm oil hardened to a slip m.p. of 55-60‹ C. or rapeseed oil, cottonseed oil or soyabean oil each hardened to a slip m.p. of 55-65‹ C. The proportion of saturated to polyunsaturated acids in the fat composition is preferably not greater than 0À5. |
