PROBLEM TO BE SOLVED: To obtain ice cream with natural palate feeling by making use of freshwater fish with its fishy smell removed and the small bones softened. SOLUTION: This ice cream is obtained according to the following process: freshwater fish is boiled in a pressure cooker in the presence of a deodorizer such as a seasoning or ginger; 300 g of the freshwater fish thus treated is then cooked in 450 cc (±30%) of vodka and sufficiently impregnated with the vodka; and the fish thus treated is mixed with 3000 cc(±30%) of an ice cream base followed by heat sterilization and then admixing a fragrance, etc., as appropriate, and the resulting mixture is frozen.
