PROBLEM TO BE SOLVED: To provide sliced cheese for heat melting treatment, having balanced properties between those related to heat treatment, e.g. heat meltability and drawability, and easiness of separating from each other or the like when the slices are placed one on another. SOLUTION: This sliced cheese is produced by incorporating the stock cheese, containingαs casein at 15 to 45 wt.% on the total protein or being adjusted to contain as casein at 15 to 45 wt.% on the total protein, with 0.1 to 1.0 wt.% of molten salt, emulsifying the prepared stock under heating, and cooling/ forming it into sheets.
