PROBLEM TO BE SOLVED: To produce a paste food product having good palatability in improved production efficiency. SOLUTION: A paste food material thrust with an electrically conductive rod is formed in a prescribed form. Electric current is passed through the formed paste food material to generate Joule heat and heat the material to <=45 deg.C by the primary Joule heating. The paste product having a form fixed by the primary Joule heating is maintained at a prescribed temperature to improve the elasticity. The product is further heated to a core temperature of >=40 deg.C by the Joule heat generated by passing an electric current. The surface of the paste product heated by the secondary Joule heating is further heated to brown the surface and the rod is heated by electromagnetic induction heating. |
