FIELD: food-processing industry. SUBSTANCE: method involves regulating working pressure P and temperature T in hermetically sealed vessel containing raw plant material and liquid within the range of <EMI ID=0.371 HE=6 WI=21 TI=CHI> P/T <0.34 delta,, where beta [ C/atm] is experimental coefficient depending on nonuniformity of temperature distribution in volume of raw plant material, its heat capacity and heat conductivity and selected within the range of 0.78 <beta <2.4. Apparatus has heat-carrier generating unit and grinding-cooking unit with cutting mechanism provided with knives and perforated separator. Apparatus is further provided with mechanism for withdrawing ready food product. Working volumes of heat-carrier generating unit and of grinding-cooking unit are within the range of 1.1 <=(V1 + V2) / V2 = 12 and are related with volumes V3 of liquid heat-carrier in heat-carrier generating unit and V4 of solvent in grinding-cooking unit within the range of 1.1 <= (V1 + V2 + V3 + V4) / V2 < = 8.3. Ratio of value L2 of minimum gap between knives cutting edges and value L3 of maximum cross section of perforations in separator walls is within the range of 1 < =(delta L2 + L3)/L3 <= 130.
