In a process to cut up meat, fish or vegetables for cooking, the cooked food is placed on a hard cutting surface. The surface is an ice panel (11) which has been frozen in a water basin (5) linked to suitable refrigeration equipment. The ice panel is removed from the basin as a single unit and placed on a suitable work station bench (2).
