PROBLEM TO BE SOLVED: To provide a method for producing a solid roux in a container, capable of reducing an oil surfacing on the roux, not generating a striped pattern having a gross and excellent in quality thereof. SOLUTION: This method for producing a roux by filling a heated molten roux obtained by a heating/mixing treatment of a raw material containing a starchy raw material, an oil and fat and a seasoning, and then cooling for solidifying, is provided by cooling the surface temperature to >=5 deg.C lower temperature than an elevation melting point of the oil and fat within 5 min, and also on this occasion, making the surface temperature of the roux pass through a temperature zone corresponding to the elevation melting point of the oil and fat ±5 deg.C within 2 min. |
