PROBLEM TO BE SOLVED: To provide a food making it possible to easily take isoflavone, etc., and preferably further calcium and preferably persistently having a good flavor by using a soybean hypocotyl extract obtained by subjecting soybean hypocotyls to a dry heating treatment and subsequently extracting the product with an aqueous medium. SOLUTION: This powdery, granular or tablet food contains a soybean hypocotyl extract in a food in an amount of 1-40 wt.% converted into a dry solid content. The soybean hypocotyl extract is obtained by subjecting soybean hypocotyls to a dry heating treatment and subsequently extracting the product with an aqueous medium. In more detail, the food is obtained by subjecting the soybean hypocotyls to a dry heating treatment at 140 deg.C for 20 min, subjecting the treated soybean hypocotyls to a two stage extraction treatment using 98 deg.C hot water, using the exemplified soybean hypocotyl extract in a food in an amount of 1-40 wt.% converted into a dry solid content, adding or not adding a calcium-containing agent and cyclodextrin, and subsequently processing the mixture. The obtained food containing processed product of soybean hypocotyl makes it possible to simply take isoflavone and/or the calcium. |
