Method comprises moistening shelled and opt. skinned peanuts with water or an aq. soln., rolling them in flour so that the flour adheres to the surface, opt repeating the moistening and rolling stage until a coating of the desired thickness is obtd., drying the coated nuts and frying them in oil. The process allows prodn. of snacks with minimum handling and pretreatment of the nuts while the dough coating adheres strongly to the nuts whether or not they have been skinned first. Either the moistening soln or the flour may contain flavourings such as salt or sugar or spices. |
