PROBLEM TO BE SOLVED: To obtain a colored salt having originality and having other taste in addition to salty taste and capable of imparting brightness to disk and provide a method for producing the colored salt. SOLUTION: This salt is colored with a pigment of Perilla frutescens. This method for producing the colored salt comprises adding a salt and ume (Japanese apricot) vinegar to Perilla frutescens and pickling the salt in Perilla frutescens and concentrating the resultant perilla solution. |
