The invention concerns a method for reproducing and rearing in aquatic medium comprising the following standard steps: hatching, vesicular resorption, different stages of larva rearing, rearing up to the fry or juvenile stage in hatchery; growth and bulking in ponds; passing from the fry phase or juvenile phase to the adult phase; selecting genitors, maturation; sampling ovocytes and spermatozoids; fertilization; embryogenesis in an incubator. The method is characterised in that it consists in constantly maintaining the hatchery water temperature at least as from the larva rearing and that of the growth and bulking ponds at a temperature as close as possible to the reared species biological thermal optimum.
